Elk burger pro tip – When cutting your meat with bacon or other fat, add anywhere between 10–20% of the total. So if you’ve got 10 pounds of elk, you’ll want to add 2-1/2 pounds of bacon, for a total weight of 12-1/2 pounds of grind.
